Hello, all! How was your holiday weekend?! Mine was WONDERFUL. Best Christmas I’ve had in years, in fact. For the first time in a while I felt really present with my family and involved in all the festivities. Christmas Eve was fun, Christmas day was super chill and relaxed, and I LOVED watching my family open the gifts I got them! I’ve been DYING to give them their presents since I bought them. I have such a hard time waiting because I just love giving gifts so much. Funny story, my mom’s birthday is December 28th (only 3 days after Christmas), but I caved and gave her the diamond earrings I bought her last week as soon as they came in the mail…I just couldn’t wait! I was so excited!
I hope everyone’s holiday was just as special as mine was. Filled with love, happiness, and new memories. It’s crazy that we’re already back in the swing of things with work and that the holidays are nearing their end. There’s so much build up and then everything passes so quickly! I guess it just it gives us more reason to really ENJOY the moments while we have them, ya know?
Speaking of getting back into work, even thought it’s a short one, it’s a BUSY one for me! Business if BOOMING for Delighted By! Our Shark Tank episode re-aired on Christmas Eve, we are expanding fasted than ever, and in a few weeks we will FINALLY be available for order online. Lots of excitement all around…but no slowing down for me anytime soon. I know a lot of you can probably relate.
When I get extra busy, I rely on quick, healthy snacks to get my thru the day. Lately I’ve been trying to reach for more homemade options instead of things from the store. I have to admit, I got a little carried away with convenience foods the past few months and I really want to make an effort to get back to my roots of making healthy wholesome right in my own kitchen. Starting with the easy Chocolate Peanut Butter Protein Muffins I am sharing today!
We’ve been thru this before…is there anyone out there that doesn’t LOVE chocolate and peanut butter together? When it comes to sweet foods, there is just not better combo…and these muffins are no exception.

Ingredients
- 2 scoops chocolate peanut butter whey protein powder
- ½ cup peanut flour
- 2 tbsp coconut flour
- ¼ cup non-dairy milk
- ½ cup liquid egg whites
- ¼ tsp cinnamon
- ¼ tsp vanilla bean powder
- 1 tsp baking powder
Instructions
- Preheat oven to 350. Place aluminum muffins liners in a muffin tray and set aside. Place all ingredients in a large bowl and mix together until just combined. Distribute muffin mixture evenly amongst the 6 muffin tins. Bake for 16-18 minutes. Remove from oven and let cool on a wire rack before eating.
Gluten-free and a double dose of protein from the whey protein AND the peanut flour. I love how light n’ fluffy these turned out! They aren’t dense like your traditional muffin, but more airy and soft. I munch on 2 or 3 at a time with a cup of coffee! For extra deliciousness, top them with a layer of creamy natural peanut butter.

CONGRATULATIONS on your new adventure. Is peanut flour close to the texture of almond flour? I have never seen peanut flour. Just wondered if almond flour would work. It would be a little lower in carbs.
