Artichoke Hearts, Romaine Lettuce & Blueberry Salad

I’m a great salad lover and like to add lots of healthy chewy produce to my salad. I alternate the type of lettuce I use to prevent getting bored.  My favorite is Romaine but I also love baby greens, Boston, Bibb, spinach, and red leaf lettuce.  Today’s salad is mostly Romaine with red leaf lettuce, artichoke hearts, cucumbers, grape tomatoes, and blueberries. Leaves should be bright and fresh looking. Choose crisp lettuces that are free of blemishes. A hard-boiled egg or grated cheese is optional.  Fresh, delicious blueberries are my topping.

My salad dressing is a basic vinaigrette using organic extra virgin olive oil and red wine vinegar with a little oregano.  It’s also excellent using organic apple cider vinegar.  Use fresh ground black pepper if available.

 

 

 

 

 

 

My recipe is for one entrée serving, and I love it for lunch.  If served as a side dish, double the recipe for 4 smaller servings.  I recommend organic when available.

Artichoke Hearts, Romaine Lettuce & Blueb erry Salad

A tasty lunch that is mostly Romaine with red leaf lettuce, artichoke hearts, cucumbers, grape tomatoes, and blueberries. A hard-boiled egg or grated cheese is optional.

Ingredients

  • 1 heart of  Romaine chopped or mixed salad greens
  • 1/2 cup grape tomatoes halved
  • 1/2 small jar of artichoke hearts drained & sliced
  • 1 medium cucumber sliced
  • 1 small slivered carrot
  • 1/4 cup slivered red onion
  • Optional: 1 hard-boiled egg quartered or 1/4 cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar or organic apple cider vinegar
  • Salt and pepper to taste
  • 1/4 teaspoon dried oregano

Instructions

  • In small bowl whisk oil, vinegar, oregano, salt and pepper. Let stand 5 minutes.
  • In a large bowl mix greens, tomatoes, onions, carrots, and cucumbers.
  • Top salad with artichoke hearts, blueberries, eggs or cheese.
  • Whisk dressing again and drizzle dressing over salad.

  1. I have to keep an eye out for artichoke hearts I do love them and sometimes have a hard time digesting lettuce so the more other ingredients in a salad the better. Splendid combination of some very healthy ingredients. I’ve been liking white onions lately, maybe because they look the best at the store right now and I always forget about our friend the red onion.

  3. I am a salad lover. I love to make salad and eat it. This salad looks wonderful. I wouldn’t have thought to add the blueberries to the veggie combination, but that’s a great idea.

    1. I try all kinds of combos – sometimes they work and sometimes not as well. I basically believe that fruit in a salad is wonderful.
