Recipe: Breaded Fried Haddock

We are in Lent season right now, so some of you may be looking for a meatless dish to prepare this Friday.  This Haddock has been a family favorite for years.  It goes great with a tuna noodle macaroni salad or coleslaw.

Breaded Fried Haddock

1 bag of Haddock, I purchase mine at Aldi’s, it contains 4 pieces of fish

1/2 cup all-purpose flour

1/4 cup corn meal

1/4 cup seasoned bread crumbs

1/4 teaspoon salt, pepper and garlic powder

oil for frying

Directions:

When fish is defrosted, mix all ingredients for the breading, except oil and fish.  I like to mix mine in a pie dish.

Place enough oil in a sauce pan to coat the bottom of the pan and put it on medium low to get to about 350 degrees.

The fish will be a bit wet so the breading will stick to it just fine

Once the breading is mixed, place a fillet in the dish and coat completely, tap off excess.

when oil is at temp. and you breaded the fillets, place them carefully in your sauce pan to fry.

It took my fish 7-8 minutes per side to fully cook, they were thick pieces.  I only flipped once.  The less you handle it the less chance it flakes off and breaks on you.

Serve with your favorite sides.
