Coconut Cake Balls

Coconut Cake Balls

INGREDIENTS:
-1 pkg White Cake Mix
-3 Eggs
-1/3 Cup Oil
-1 Cup Water
-1/2 - 1 tsp Coconut Extract
-1/2 Cup Sweetened Coconut Flakes
-1 tub of Cream Cheese Frosting
-2 Cups of Toasted Coconut Flakes
-1 Bag White Choc. Chips or White Melting Chocolate

- Combine mix, eggs, oil, water & extract. Beat on low for 30 seconds, then on Med. for 2 minutes.

-Add in coconut flakes and beat on low until mixed in.

-Bake in greased pan at 350* for 30 minutes.


-Take cake out of oven and cool completely.

-Once cooled, crumble up the cake into little pieces.

-Add the cream cheese frosting and mix together.

-Cover and place in refridgerator for 30 minutes to stiffen.
  
-Remove cake mixture from fridge and roll into balls.

-Place rolled cake balls onto wax paper lined baking sheet.

-Pour white chocolate into glass container and microwave for one minute. Stir and if it's not smooth yet, then microwave for another 30 seconds.

-Lay out baking cups on another baking sheet or place chocolate dipped cake balls back on the wax paper lined cake sheet. Once dipped sprinkle toasted coconut on top of each ball.

-Let chocolate set up and you're done! These are seriously so scrumptious...you're gonna wanna make them right now! hehe
