Cheesy dip and crispy chips…Yum! This world-famous combo has a nasty temptation and brings guilt for health conscious people. I tried to make this snack as guilt free as possible. Using silken tofu as a base in place of fatty cheese provides great creamy texture without any bad calories. I have been using tofu religiously in all my recipes in place of Paneer (Indian Cottage Cheese). I usually get extra firm tofu for salads, grilling, Thai curries, stir fry and all the vegetarian recipes under the sun. Silken tofu wasn’t in my go to list of ingredients until my husband bought a huge pack from Costco :D. I had to use it up and in process experimented and found some great recipes.
Here is my recipe for a creamy dip without any cheese. I use this silken tofu and it has a minimal amount of fat. (Not entirely fat-free)
Ingredients :
- Silken Tofu – half packet – around 6 oz
- Tomatoes – 2 medium-sized
- Mint – 1 bunch
- Salt – as per taste
- Black Pepper – as per taste
- Texture and Taste enhancers – See suggestions in ‘Variations’ below
Procedure :
- Add all the ingredients in a blender and blend till smooth. Do a taste test and adjust salt and pepper accordingly
Variations :
Though the base taste with these 3 ingredients is pretty good, you can use following to enhance the taste
- Want more heat? Drizzle a little hot sauce
- Want some tang? Add some Lemon / Lime Juice
- Want some crunch?
- add slightly crushed peanuts (roasted salted of course)
- add your choice of seeds (pumpkin seeds,
- add bread crumbs
