Finally its FRIDAY! Whoop let’s all put  on our party hats to ring in the weekend. I have the next 9 days off and I don’t even know what to do with myself. Maybe do a little this and that, or just a whole lot of nothing. Yeah, I’m a homebody. I would like to go and do some stuff though. Monday is my Birthday and I usually don’t do anything to celebrate but I may just treat myself for once. Who knows, the possibilities are endless and I just have to get my creative juices flowing. 

Speaking of creative juices. Look at these lovely spicy little things. Who loves cupcakes, raise your hand. *Raises two hands* Who loves churros, raise your hand. *Another two hand raise, with jumping up and down* Now lets combine the two into a sweet little handheld treat. Add a little mini churro on top and we are good to go.

So, my mom is literally my biggest critic of all time. She can be harsh, especially when it comes to sweets. She is one of those people who seem to be so picky on what she puts in her mouth. Well last night after I got back home from dropping off some cupcakes for her and my dad she text me saying that the cupcakes were so good and that she wanted to eat them all. Now that doesn’t sound like much but it made my day. Just the smallest little comments like that seriously can brighten up someones world.

These seem to have the perfect amount of sweetness between the cake and the frosting. And I absolutely love this frosting, it is my go to buttercream for any occasion, so adaptable and you can add anything to make it the flavor you’d like. I also added these cute little churro bites that I found here. So next time you’re in the mood for some cupcakes, look no further and give these a try!

Makes and frosts 24 cupcakes (give or take)

Ingredients:

Cupcake:
1 (18.25 oz) pkg white cake mix
1 cup milk
1 stick butter, melted
3 eggs
1 tsp vanilla
2 tsp cinnamon

Cinnamon Buttercream:
3 sticks butter, salted
4.5 cups powdered sugar
3 tsp vanilla
2-3 Tbs heavy cream
2-3 tsp cinnamon (more or less depending on preference)

Directions:

Pre-heat oven to 350. In bowl mix together your cake mix, milk, butter, eggs, vanilla and cinnamon. Mix with electric mixer on low-speed for about 1 minutes. Increase speed to medium and continue to beat for another 2 minutes or until blended. Place cupcake liners in cupcake pan. Using measuring cup or spoon fill each cupcake liner about 2/3 full, be careful to not overfill or the cupcakes will overflow. Place in oven and bake for about 20-25 minutes or until tops spring back when pressed and toothpick comes out clean. Repeat with remaining batter. Cool your cupcakes.

Meanwhile in large bowl to make buttercream mix together with electric mixer your butter and powdered sugar on low-speed for 1 minute until blended well. Increase your speed to medium for another 2-3 minutes until it becomes light and fluffy. Add your vanilla, cinnamon and cream (one Tbs at a time until desired thickness). Mix until combined.

Add your frosting to piping bag or using an offset spatula and frost your cupcakes. Mini churros are not required and were just used as decoration. If you’d like to add them, bake according to package directions, cut in half and place on top of frosting. Serve and enjoy!
