I just love tropical flavors. Pineapple, coconut, you know the usual tropical dessert suspects. Put them together and I'm all in. The very best part is that this easy Pineapple Coconut dessert comes together with only three simple ingredients. But don't you dare let the simplicity fool you, this recipe packs a satisfying sweet punch. This recipe doubles and triples so easily to serve a crowd but it's also perfect for just whipping up at home when you need a sweet treat.

Plus, I am kind of obsessed with these mini parfait cups and spoons that I ordered years ago.

They are the perfect size for a sweet treat any time. I've been using them since I shared the original version of this dessert.

I decided to give this easy sweet treat a much needed makeover.

This version is much more smooth and has a more balanced flavor and texture.

I'm so happy with this sweet upgrade.

CREAMY TROPICAL DESSERT RECIPE 

This is probably best described as a tropical pudding, but it's not exactly pudding. It's kind of like a tropical fluff dessert without actual fluff. It just uses coconut flavored pudding for an extra pop of tropical flavor that we all love. That and the delish pineapple of course. The juices are one of the main reasons this amazing but simple recipe works so well. For go-to tropical dessert recipes this one is an easy solution without a doubt. Here are the ingredients we'll be using to make this:

  • Canned Crushed Pineapple
  • Coconut Flavored Pudding
  • Whipped Topping like Cool Whip

Mixing these ingredients together thoroughly will be key. You must make sure that the pudding mix is totally incorporated.

My hubby had a craving the week that I had originally written this post. He asked if I could pick up chocolate chip cookies with peanut butter inside at the bakery at Publix.

I told him that there was no way they would have that. I was right, of course.

But, I did have a chance to stalk the desserts while I was there. I spotted a pineapple coconut parfait that was in a similar mini parfait cup.

I asked what it was made with and my favorite bakery dude said just pineapple and coconut with whipped cream. I knew it was time to make my own tropical dessert cups at home.

Seemed easy enough and that's where this quick dessert comes into play.  Isn't it funny how ideas are born? If my hubby didn't have a weird cookie craving one night, I never would have made these. Interesting, don't ya think?

GARNISH FOR TROPICAL DESSERTS

There are only a few perfect garnishes fit for tropical desserts and I totally have them for you. Definitely whipped cream and a cherry because it goes on pretty much any dessert. Then to take it up a notch, consider a sprinkle of toasted coconut or a pretty vanilla wafer. You really can't go wrong with these simple choices.

Tropical pineapple and coconut dessert with only three ingredients.

Ingredients

  • 1 Can (20 oz.) Crushed Pineapple in Juice, undrained
  • 1 pkg. (3.4 oz.) Coconut Cream Flavor Instant Pudding
  • 1 Cup Whipped Topping

Instructions

  1. Mix all three ingredients inside a medium sized bowl making sure the ingredients are fully combined The pudding mixture should be completely dissolved.
  2. Refrigerate the mixture for at least one hour before serving.

  1. I made the pineapple recipe but I used coconut cream instant pudding and added 1/3 cup of drained chopped maraschino cherries (make sure you dry them a bit before adding), then topped it with whipped cream and toasted coconut…a Hawaiian taste treat!

  2. You might want to check the picture of what the ingredients are. It shows a box of Jello cook pudding and the recipe calls for instant. A big difference between the two.
