Mint Chocolate Pudding Cookies

Having a three day weekend has been a blessing. I got to spend great girl time with a friend, get some chores done, and just relax. But it wouldn’t have been this relaxing if my husband didn’t come to the rescue. On Thursday I was going to make myself a quick snack when I realized that we had a mouse in the kitchen!! This little pest had been all over our kitchen counter. So after I freaked out, J went and bought some traps while I thoroughly disinfected the kitchen. The next morning, the sneaky little mouse took the peanut butter off the trap! Luckily, we caught the guy Friday night while we were out for dinner and a movie. Hopefully he doesn’t have any more friends. I am very thankful that I am married and my husband is very good at taking care of situations like that.

The start of Tuesday Treat Days begins this week. Each Tuesday evening they team has meetings by position groups, and a couple years ago, one of the wives started bringing in treats for her husband’s players. Last year a few of J’s players asked me to start participating too. Asked makes it seems like they did it nicely, the guys kind of manipulated me into making treats for them. One asked in front of his mom, and the others pulled the ultimate sucker you in line, “but don’t you love Jesus?” How could I say no? So from that week on, I always showed up with something different and creative. It’s an unspoken competition between wives, or maybe it’s just me thinking that way. But I try to do something bigger and better each week. I have a lot of guys to bake for this year.

This week I made these really great chocolate pudding cookies. If you’ve never made a pudding cookie before, I suggest that you try it! The pudding mix added into the dough makes the cookies just so soft. Ever since I found a recipe for them, I’ve tried to find different ways to change it up. I don’t normally make cookies for Tuesday treat day, because treats in a 9×13 are a lot easier for a larger group. But because I had the time today, I thought these would be fun. I actually doubled the batch and added M&Ms to half of the dough instead of the mint.

  • 1½ sticks butter (¾ cup)
  • ¾ cup brown sugar
  • ¼ cup sugar
  • 1 (3.4 oz) Instand Chocolate Pudding Mix
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 2¼ cup flour
  • ½ tsp salt
  • 1 pack Andes Mints

Preheat oven to 350ºF

In a large bowl, cream together butter and sugars. Add in pudding mix and beat until blended. Mix in eggs and vanilla. Add baking soda and salt. Next, mix in flour. I usually mix in a little at a time to make it easier, and so flour doesn’t fly everywhere in the mixer. Roll into 1″ dough balls and bake for about 10 minutes. 

While the cookies are in the oven, unwrap the mints and cut each one in half. When the cookies are done, remove from oven. Place half a mint on top of each cookie. Using the back of a spoon, or a spatula, spread the melted mint chocolate on the top of the cookie like a frosting. Move to wire rack and let cool.
