Fruit Parfaits

Meal Monday is a weekly post series on the subject of food. I’ll talk about my love for food to sharing recipes that I love cooking to food tips.

What is your favorite thing to eat for breakfast? Do you make something simple or make a big breakfast?

I usually like to make something that is quick to prepare. There are some mornings we go really simple and eat cereal for breakfast. Katie requests cereal all the time for breakfast. She especially loves my granola cereal.

Another thing I love to eat is fruit. I either add it to the side of the meal or add the fruit into the food. The first thing that is very common to eat in my house is fruit wraps. Katie and I love to eat the wraps.

The second thing that is very common to eat in my house is fruit parfaits. I change up the fruit in the parfait depending on the fruit I have on hand. I add fruit to the bottom of my parfait cup. Then I add plain Greek yogurt and a drizzle of honey. Then I’ll sprinkle granola and chocolate chips on top. The chocolate chips are one of Katie’s favorite parts. She will sometimes pick them off of her yogurt and eat them plain. Sometimes I’ll add extra fruit on top.

Here is my recipe for fruit parfaits.

Fruit Parfaits

Ingredients:
handful of fruit, cut
1 cup plain Greek yogurt (or flavored)
drizzle of honey
sprinkle of granola
small handful of almonds, whole or sliced
sprinkle of chocolate chips
extra fruit for top, cut

Directions:
1. Place fruit in bottom of parfait cup or bowl.
2. Add plain yogurt on top of fruit.
3. Drizzle honey on top of yogurt; mix slightly.
4. Sprinkle granola, almonds, and chocolate chips on top.
5. Place extra fruit on top to finish off the parfait.

Serve with a cup of juice and/or coffee and enjoy!
