Okay, I might be a little too excited about pumpkin, but I just can’t help myself…

Pumpkins are low in saturated fat and calories, are high in fiber and are very low in cholesterol and sodium.

They are also chock full of vitamins and minerals such as: Vitamin E, Vitamin B6, Folate, Iron, Magnesium, Vitamin A, Vitamin C and Potassium. Not to mention, they’re pretty darn tasty too!

Here’s one of my favorite protein shake recipes to make after a good Fall afternoon workout or for a breakfast on the run. You can use fresh or canned pumpkin puree. Just be careful if you’re using canned pumpkin – make sure it is 100% pumpkin puree and not pumpkin pie filling. There is a HUGE caloric and sugar difference between the two.

Green Machine Pumpkin Pie Protein Shake
  • 1/4 Cup Pumpkin Puree
  • 20 grams (usually one scoop) Vanilla Whey Protein Powder (protein milkshake bar)
  • 1 tsp. Stevia (or other sweetener of your choice)
  • 1/3 Cup of Frozen Kale
  • 1/2 Cup – 1 Cup Almond Milk
  • 1/2 tsp. of Cinnamon
  • 1/8 tsp. of Nutmeg

Blend ingredients together for 1 min
