My husband says I have every small kitchen appliance ever made. That’s not quite true, but I admit I am a SKA junkie. And I do have a favorite of course, and that title belongs to my slow cooker. I LOVE IT. No, really…I LOVE IT! Put stuff in it, close the lid, turn it on & walk away. Hours later take the lid off and ta-da, something yummy is inside.

Most of you know that I’m on a mission to get fitter, healthier and shed a few pounds. I’ve been trying to find some new recipes that I can make in my slow cooker. This book is full of them.

There is also and index and an About the Author section.The book has over 500 recipe, and each recipe has a suggested slow cooker size and gives the serving size. My favorite thing though is that they all have the nutritional value. That’s priceless for someone who had dietary limits or is trying to get healthier.

The recipes are not that expensive to make, and most have just a few main ingredients, with the other ingredients being ones you usually have on hand.

One day last year, my hubs and I went to a Chinese restaurant with our daughter and her husband. They had some Chicken Curry and I decided to try it since I’d never tried anything with curry in it(that I know of). Let me tell ya, it was so very very yummy! I fell in love with it. Now I try to find recipes with curry in it so I can taste it’s yummyness. And look what I found in this cook book:
African Beef Curry

(Ideal slow-cooker size: 3 quart)Ingredients:1 lb. extra lean ground beef, brown
1 large onion, thinly sliced1 green bell pepper, diced
1 tomato, peeled & diced
1 apple, peeled, cored & diced
1-2 tsp. curry (or more to taste)
4 cups prepared riceDirections:1. Spray slow cooker with fat free cooking spray
2. Add all ingredients except rice in slow cooker
3. Cover and cook on high 6-8 hours
4. Serve over hot ricePer Serving:
340 calories (70 calories from fat)
7 g. total fat (3 g. saturated, o g. trans)
30 mg. cholesterol
50 mg. sodium
47 g. total carbs (2 g. fiber, 6 g. sugar)
20 g. protein

1. You can thicken this by stirring in 6 0z. can of tomato past in Step 2
2. This is interesting served with a spoonful of lowfat or non-fat “lemon-enhanced” vanilla yogurt on top of each individual dish

I plan on making this semi-soon, so I’ll be posting about how it turned out. I’ll probably use ground chuck instead of ground beef and will definitely be using brown rice instead of white.

  2. I have an old copy of Fix It and Forget It, but haven’t used it in years. My crock pot gets used a lot, especially in the winter, so I’ll have to seek out this newer, lighter edition. Thanks for telling me about it!

  4. I have two sizes of slow cookers and find them both useful. I tend to use them most in the winter, very handy. We have a few favourites, though my family is always open to me trying something new in them.

    • The weather in Florida is pretty much the same all year round, so I use mine all the time. But you’re right, cooking in it in the winter would be nice to warm you up!

  5. Sounds like an easy recipe. I blogged about a Fix it and forget it book a few weeks ago and also found it quite good, just not for vegetarians. Too heavy on the meat recipe side.

  6. I need to use my slow cooker more. It’s an old, creaky one with broken handles and a very high LOW setting. Maybe I should get a new one… And a couple of new cookbooks like this one…

  7. The apple is an appealing flavor in this curry. It looks pretty straightforward and easy, but I was not too crazy about her orginal crockpot cookbook–too much reliance on ingredients like Velveeta cheese. The light version will probably avoid that sort of ingredient, but I think I’ll pass.
