Guilt Free Cupcakes

I found this cupcake recipe in my email from Hungry Girl. I love her recipes and her list of goodies made with canned pumpkin was wonderful. We love cupcakes made with devils food cake mix and canned pumpkin. I throw in 1/2 cup of chocolate chips in the recipe when I make them.

I decided to try these Carmel Pudding Pumpkin Cupcakes. I did not have the caramel candies so I used the Smuckers Fat Free Topping and Almond Milk rather than Soy Milk. Also I had to add to the cooking time.



I think some pumpkin pie spice would be a good addition and I might try the recipe with spice cake mix.

I give the entire batch a life span of 30 minutes after Rusty gets home; even less if Evan was here.
