EASTER MEMORIES

 Simple Pleasures #35

I love all things Easter.

I have wonderful Easter memories from when I was a child and from when my daughters were small.

Easter eggs

Every Easter was spent at my grandparents' home in Kentucky when I was growing up.

We would leave Canada early on Good Friday morning and arrive in Kentucky later that afternoon.

The family florist next to their house was always a hive of activity as corsages were necessary for every female from little girls to grandmothers.

When I was eleven my grandmother paid me 25 cents an hour to bag corsages in the basement of the florist.

It was my first job.

Sunday morning always arrived with a flurry of last-minute activity at the florist and after checking out our Easter baskets and eating a quick breakfast we donned our finest Easter outfits.

In those days we wore frilly dresses, patent leather shoes, gloves, and hats.

As you can see I carried on the tradition with my own two daughters.

Gluten-Free Easter Dessert

I love bundt cakes, but it can be difficult to find a gluten-free version that is as yummy as the cakes I remember.

I found this Gluten-Free Hummingbird Bundt Cake just in time for Easter.

I love the fact that it is an easy bake in one pan cake.

Coconut oil, avocado oil, banana, and pineapple make the cake moist and delicious.

There is no fussy frosting to worry about. Just drizzle some glaze or sprinkle some powdered sugar on top.

What I'm Reading

I am currently engrossed in the newest book by one of my favorite authors.

A Sunlit Weapon by Jacqueline Winspear

A Sunlit Weapon is #17 in the Maisie Dobbs series by Jacqueline Winspear.

In the latest installment of the New York Times bestselling series, a series of possible attacks on British pilots leads Jacqueline Winspear's beloved heroine Maisie Dobbs into a mystery involving First Lady Eleanor Roosevelt.

The story takes place in WWII England and involves the first female pilots who ferried planes in Great Britain.

If you have never read any of this series I would recommend starting with the first book in the series or you can purchase a box set of books 1 through 6.

Catching Up

Thank you to everyone for your well wishes and prayers. Katy is out of the ICU and recovering at her home. She is still very weak and we have spent the week taking her to different medical appointments.

I did get in to see my doctor on Wednesday and have an appointment with the neurologist on Monday. Hopefully we can come up with a solution for the pain that doesn't leave me too groggy to function.

I have to be able to drive her and to continue working as I need the extra income.

Continued prayers for both of us are very welcome.
