Vanishing Banana Bread

I had 7 very ripe bananas sitting on my counter, begging to be used.  So, Friday morning I decided to whip up some banana bread.  I pulled out my trusty recipe for banana bread.  I love this recipe.  My family loves this recipe.  It is SO easy.  You put everything in one bowl, stir it all up, put it in a loaf pan, bake, and you're done!  I had one little problem....my recipe calls for 3-4 bananas, I had 7 that I needed to use.  So, I decided to double the recipe.  Not a problem, right?  Well, I found out I only had enough white flour for one batch.  Hmm....I did however have 2 1/2 bags of whole wheat flour on hand.  So, I decided to play around with the recipe a bit and here's what I came up with:

Vanishing Banana Bread

6 or 7 ripe or overripe bananas
1 cup sugar
1 cup brown sugar
1 & 1/2 cups all purpose flour
1 & 1/2 cups whole wheat flour
1/2 cup melted butter (1 stick)
2 tsp baking soda
2 tsp salt
1 cup chocolate chips or more 

Mush up bananas in a large mixing bowl.  Stir in all other ingredients.  Lightly grease and flour two 
8" x 5" loaf pans.  Pour batter into pan.  Bake in preheated 325* oven until done 70-90 minutes.  Test for doneness by inserting butter knife into center (done when knife comes out clean).  Cool in pan for 5 minutes; turn out on rack to cool completely.

I wanted one loaf w/out chocolate chips and one with, so I filled up one pan with half the batter, then I added 1 cup of chocolate chips to the batter.  I stirred the chocolate chips in and put the rest of the batter in the second pan.  It was pretty chocolatey, just the way we like it.  

I renamed it Vanishing Banana Bread because this is what happened immediately after I took it out of the oven. 

Please allow me to paint the scene.  I had just taken the bread out of the oven.  I left the kitchen to go  do something and I came back 5 minutes later to put the bread on the cooling rack.  5 minutes.  That's all it took.  Dave had hacked into it like a starving man who hadn't seen food in days. 

The Beast enjoyed it immensely as is evidenced by the chocolate on his cute little mug.  Gosh I love this kid!


Princess and Cy scarfed it down the minute they got home from school.  I called to warn Dave that it was going fast and he begged me to save him a slice.

This is how it looked by the end of the day. 


Hence the new name Vanishing Banana Bread.

It was quite delicious, if I do say so myself!  You can add nuts to it if you want, Dave isn't a big fan of nuts, so I usually leave them out of my recipes.  I, however, think that nuts would be delicious in this recipe.  Mmmm, walnuts.  I may have to add them next time.

Anyhow, give it try.  I promise you won't be disappointed.
