S'mores Cupcakes

This is my version of a S'mores Cupcake.

These are the basic ingredients that I used...
Devil's Food Cake Mix, Graham Crackers, Mini Choc. Chips, Marshamallow Cream, Chocolate Frosting, Mini Marshmallows & Choc.Swirl Marshmallows.

Crush a pack of graham crackers into crumbs in it's plastic case. It worked out well for me.

Prepare the cake mix according to the directions on the box. Add about a cup of the mini chocolate chips.

Line the muffin pan with cupcake liners and sprinkle in some of the graham cracker crumbs.

Pour in some batter, about 1/2 full.

Cut the large marshmallows in half.

Place the marshmallow halves into the center of the batter.

Cover marshmallows with a small spoonful of cake batter and sprinkle more graham cracker crumbs on top. Then bake as directed.

 In a medium bowl, stir together the marshmallow cream and the chocolate frosting. Leave some swirls in it.

Spoon frosting mixture into a large ziplock bag and cut a hole in one of the bottom corners.

Take cupcakes out of the over and let cool.

Pipe the frosting mixture onto the cupcakes and top with a mini marshmallow.

Then sprinkle on some mini chocolate chips and some more graham cracker crumbs.




I think these turned out so well. I was a little worried, since I just made this recipe up, but they were great! These are perfect for Summer Campouts and any Fourth of July festivities!
