Quaker Chewy Dipps Granola Bar Fruit Pizza Recipe

We’re back in school for the 2015-2016 year. I can’t believe that summer is gone already. We still have our vacation to look forward to, but I’m in full-on “must have breakfast, lunch and snack options” mode. Having three kids is like needing to have my own grocery store. I think someone forgot to tell me just how much kids can eat! Ouch, my wallet and bank account cry every time we go grocery shopping. One of our favorite breakfast (and sometimes snack) options has been Quaker Chewy Bars, or the Chewy Dipps like I used in this recipe. These are the same bars, just coated in chocolate.

Don’t you remember being a kid yourself and having a bowl of warm oatmeal for breakfast? Man, I sure do! I still love a bowl of it, especially the apples & cinnamon or one of the fruit & cream varities!

Strolling through the aisles at Walmart leads us with a cart full of great choices for breakfast, lunch, dinner and snacks. I am often refilling our snack basket with Chewy Bars and snack baggies filled with cereal like Cap’n Crunch. I’m telling you, this snack basket idea has been the best thing ever! I bring home the groceries, portion everything out into baggies, and they can help themselves (well, most of the time they still have to ask). No more bowls of snacks, no complaining about what I pick because they can help themselves, and I control the portions and options!

What’s really fun about Quaker Chewy Dipps is that if you microwave them for about 20 seconds, it turns into this chocolatey, gooey mess that you can mix together, smash into a mini cake pan and let it sit for a few minutes to harden back up. Instant crust for just about anything! With that successful experiment, I decided to combine two ideas: granola bars and fruit pizza.

Ingredients

Quaker Chewy Dipps bars, flavor of choice (we used chocolate chip and the number will vary depending on your pan size)
Favorite fruits like strawberries, blueberries, pineapple, kiwi, banana, mango, raspberries, etc
Cream cheese, 1 package softened to room temperature
Marshmallow fluff, about 1 cup

Directions

In a bowl, heat your unwrapped Chewy Dipps bars in 10 second increments. Once softened, smash and mix together with a spoon. Using either a mini cake pan, regular sized round cake pan, or even a circle cookie cutter, you will use a spoon and press the gooey Chewy Dipps mixture to form your crust. If using a cookie cutter, form your crusts on a wax paper lined cookie sheet or plate. Once you have your crust formed, set it off to the side to cool and firm up.

In another bowl, add your softened cream cheese and marshmallow fluff and combine thoroughly. You can use a hand mixer if you like, or just use a large spoon and be sure to smash any larger pieces of cream cheese against the side of the bowl.

You’ll want a thin layer of the “sauce” (the cream cheese marshmallow mixture), so spoon on some and spread evenly. Top (and have fun) with your favorite fruits, slice with a sharp knife dipped in hot water, and serve!
