I love bananas. There is something about them as a fruit and baking with them that I absolutely love. Give me any banana dessert and this girl will be happy forever.
This Banana Snack Cake is one of my favorite cake recipes, not only is it simple, it has minimal ingredients and bakes up quickly. You can eat it warm or cooled.
We like to eat it either way, you can dress it up or down or eat it as is which is the beauty of a simple Snack Cake recipe like this, there is no wrong or right when it comes to this recipe.
We oftentimes like to garnish with a little powdered sugar and whipped cream to add a little something but you absolutely can eat as is, or you can even frost it if you like!
This Banana Snack Cake is just like banana bread but in cake form and we can’t get enough. So if you are a banana bread fan then you will love this cake.

WHY THIS RECIPE WORKS:

INGREDIENTS NEEDED (FULL RECIPE BELOW):
All-purpose flour
Granulated sugar
Baking powder
Baking soda
Salt
Vanilla yogurt
Banana
Canola oil
Vanilla extract
Egg
Powdered sugar, optional
HOW TO MAKE A BANANA SNACK CAKE:
- Preheat the oven to 375 degrees. Spray a 9-inch round cake pan with baking spray, set aside.
- In a large bowl, add in the flour, sugar, baking soda, baking powder, and salt, whisk to combine.
- In a separate bowl, whisk together the yogurt, mashed banana, oil, vanilla, and egg.
- Add the wet ingredients to the center of the dry ingredients and stir until just combined. There should be no dry patches but do not overmix.
- Pour the batter into the cake pan and smooth out the top. Bake for 20 – 22 minutes or until a toothpick comes out mostly clean, a few crumbs is okay.
- Let the cake cool in the pan for 10 minutes. Invert the pan and place the cake on a wire rack and let cool completely.
- Garnish with powdered sugar if desired, serve and enjoy!
This cake is literally one of the easiest cakes you can make. And it’s nice and tall so that is why we like to use a springform pan for this recipe, otherwise if you have a taller-sided pan that should work too.
DO I HAVE TO USE VANILLA YOGURT?
We love the flavor that vanilla yogurt gives this Snack Cake but if you don’t have any on hand or can’t find any you could also use sour cream, plain yogurt, or Greek yogurt as well.
Some form of yogurt or sour cream is essential to this recipe so it can not be omitted just substituted for different options, the flavor may taste different if you do not use the vanilla.
You could add a little more vanilla extract into the recipe to make up for that though, but not too much maybe 1/4-1/2 tsp at best.
HOW TO STORE:
This Banana Snack Cake Recipe will keep in an airtight container on the countertop at room temperature for 2-3 days. To keep longer place in the refrigerator where it will keep for up to a week.
This can also be frozen, let cool completely and then wrap the cake in plastic wrap and foil and place in a freezer bag, this should keep in the freezer for up to 3 months.
Let defrost in the refrigerator or on the countertop overnight before consuming.
TIPS AND TRICKS:
- Make sure that you do not over-mix this cake so it doesn’t become chewy.
- You can use a 9″ springform pan or a high-sided 9″ round baking pan for this recipe.
- This can be frozen, see my tips above on how to do that.
- Dress this up how you’d like. Add frosting, powdered sugar, whatever you like!
