Crab Salad

Hey Y'all and Happy Tuesday! Hope your week has been going great! Ours is starting off wonderfully. We are having "open window" weather here in Indiana and I'm loving it! The fall breeze coming in feels amazing. I love the smells, too...bonfires and grilling out and leaves burning and apples. Happiness!

So I'm not necessarily one for food short cuts, but I'm really trying to get better at it. For some reason I have this weird complex that if I don't make something completely from scratch, I can't post about it. Why do I feel that way? I have no idea. I'm really working on getting over that feeling though. There are some amazing recipes out there that have short cuts in them that I love. So why can't I do the same?!

Like tater tot recipes. If I don't make the tater tots myself I feel I can't post it. WHAT!? Who makes homemade tater tots? I'm nuts. Or a recipe with french fries. I feel I have to make the fries myself instead of using frozen. That's not always realistic. 

Same with sweets. Like I don't have to make the bread in order to show something with bread. I don't have to make lady fingers or pound cake to do fun things with them. I obviously don't grow my own wheat to make my own flour or make my own chocolate chips...so why do I feel that way with other things? It's a mystery to me.

Today is the day though I'm breaking the mold and stepping out of my comfort zone with this delicious Crab Salad!
I did not buy fresh crab legs and cook and shell them myself. I bought imitation crab from Meijer called Crab Delights Garlic Herb Flake Style. It came in a bag and I'm posting about it and...the world didn't stop turning! No way!
This stuff is delicious! I honestly couldn't tell a difference in taste or texture. It had a recipe on the back for crab salad, but some of the ingredients are not Hub and I's favorite. So I made it my own!
We served ours on flat bread. And it's not pictured because I didn't want to turn people off, but we added shredded cheese to ours! What?? Crab and Cheese!? Gross, right?! Wrong. It just took these flat breads over the top. Feel free to leave it off though :)
I made these super easy Copycat Cheddar Bay Biscuits to go with the Crab Salad! They're just like Red Lobster's!

Ingredients:
1 package (8 ounces) imitation crab
1/2 Cucumber, diced
1/2 Green pepper, diced
1/2 Cup baby carrots, chopped
1/4 Cup mayonnaise
1 Tbsp lemon juice
1/4 tsp dill weed
Salt and pepper
Flat Breads
Shredded cheese for topping, optional

Directions:
Get all your vegetables together and chop em up.

In a large bowl, mix together the mayonnaise and lemon juice.

Add in the crab, veggies, dill weed, salt and pepper. Stir to coat.

Lightly toast your flat bread.

Add a large scoop of the crab salad to the flat bread. Top with cheese (if you want) and enjoy!

Sea Best Imitation Flake Crabmeat

Does anyone else have that weird "must make everything from scratch" hesitation with recipes? I don't get it, but I need to move past it. Especially since we're trying to start a family. I know once a baby comes there will be so much less time for dinner. Please tell me I'm not the only one! :)
