The Best Banana Bread


Banana Bread 

This is the Best Banana Bread that I have ever had. I have tried to find a recipe that doesn't taste like too much banana. It melts in your mouth and is very moist and sugary, and you can still taste the banana. The recipe makes two loaves, so you can give some to your friends. 

Ingredients:
3 cups white sugar
3/4 cup butter, softened
3 eggs
2 cups mashed ripe banana
1/2 cup sour cream
3 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1 1/2 cups chopped pecans (optional)

Preheat oven to 325 degrees F (165 degrees C). Lightly grease and flour two 8x4 inch pans. In a large bowl, cream together the sugar and butter until light and fluffy.


Stir in the eggs one at a time, beating well with each addition. I used my electric mixer. Stir in the banana and sour cream. (by hand)


In a separate bowl, combine the flour, baking soda, baking powder, cinnamon and pecans. I didn't put in the pecans for my husband. I have made it with the pecans and it is great both ways.

Stir into the banana mixture, just until combined. Pour batter into prepared pans.



Bake in preheated oven for 55 to 65 minutes, until toothpick inserted into center of loaf comes out clean. 
Remove from pan and place on a wire rack to cool. 

 Serve warm or cold. Yum.

This just finished baking and it is the best I have ever had!! I made one loaf and used rest of batter to make muffins. Will be keeping this recipe!! Thank you for sharing!

How much baking soda was used. It's not listed. Thx.

Elaine, sorry for the error, it calls for 1 tsp. baking soda and 1/2 tsp. baking powder. I have changed the instructions for all. -Erin
