Menu Monday: Easy Chicken Dinner

My beautiful friend Chrissy posted this recipe on her blog.….and I just had to try it!
Her blog is called “I’m No Martha,” but don’t let that fool you….
She’s truly a sister who loves and serves her husband, her children, her friends….but best of all—-she loves the Lord and wants to please Him!
(That puts her about 1000 notches above Martha….in my book) π

Crock-Pot Chicken Dinner
4-6 Chicken Breasts (frozen or thawed)
2 Cans Whole New Potatoes, drained (I used 4 regular potatoes, diced)
1/2 Bag Baby Carrots
1 Can each – Cream of Chicken and Cream of Mushroom Soup
Salt, Pepper, Garlic and Onion Powder to taste (I used one packet of Onion Soup instead!)
“Dump it in your crock-pot, stir, set to high for 4-5 hours or low for 6-8 hours. Easy, peezy, lemon squeezy.” – Chrissy
I layered it like this:
- 4 cubed raw potatoes (prob. less than $.50)
- carrots (half of a $.99 bag, so $.50)
- chicken (so the chicken juices would season the veggies) ($2 from The Box)
- packet of Onion Soup (several packets came in the box, so around $.50)
- Cream of Chicken/Cream of Mushroom Soups stirred together (stocked up at $.50 each)
I put this in right before church on Sunday(on high), and when we opened the front door at about 1:15, we were almost knocked over by the awesome SMELL!
While I was separating the chicken and veggies into serving dishes, my 6 year old peeked into the crockpot, and then started running around the house yelling, “GRAVY ALERT…..GRAVY ALERT!!!” (That prompted me to fill a separate bowl full of “gravy”!)
During the meal she announced that we were having a FEAST today…..
Hmm…..a feast…..for $4.50…..
not bad. Not bad at all.

I just put this on for lunch tomorrow. I doubled the gravy bit to stretch it over a few days by adding rice to it as well.
