I can’t keep Nutella stocked in the house. It disappears almost as quickly as it appears.
A constant line item on the grocery list.
My daughter can’t seem to get enough of this stuff. Her modern-day Skippy. And I have flashbacks to my reckless, youthful Skippy peanut butter eating days when I see her eating heaping spoonfuls of Nutella straight from of the jar …
* Sigh*
Clearly the nut doesn’t fall too far from the tree.
So this Nutella recipe in a mason jar is the perfect combination of my daughter’s current childhood {obsession} and mine from years of yore …
in big heaping spoonfuls.
Big Heaping Spoonfuls
NUTELLA MOUSSE PEANUT BUTTER CUPS
(Makes 8 servings in 1/2 pint-sized mason jars)
Ingredients
1/4 cup Nutella
1 1/4 cup milk ~ fat free or 1% milk (don’t use whole)
1/4 cup sugar
1 packet instant chocolate pudding (1.34 oz. box)
chocolate wafers (2 cups crushed)
3 TBS peanut butter
1 cup butter
Cool Whip (8 oz. for mousse; extra for topping)
Step 1: Peanut Butter Crust
Pulverize one package of chocolate wafers (I put them in a Ziploc bag and crushed with a rolling pin; you can do the same much faster if you have a food processor).
Mix 2 cups of the crushed wafers with melted butter (nuked in microwave), sugar and 2 heaping tablespoon-fuls of peanut butter.
Layer generously into bottom of mason jars and bake in oven at 375 degrees for 10-minutes.
Step 2: Nutella Mousse Filling
Whisk dry instant chocolate pudding mix with 1 1/4 cup of fat free or 1% milk vigorously for 2 minutes. Add in 1/4 cup of Nutella and whisk for another 1-2 minutes. Add in 1/2 of Cool Whip (4 oz.) and whisk for another 2-3 minutes.
Gently fold in remaining Cool Whip.
{You should use a spatula for this step, not a whisk}
Pour mixture into jars on top of peanut butter crust; chill for 2-4 hours.
Step 3: Dress & Serve
Serve with dollop of Cool Whip; top with crushed chocolate wafer crumbs and Reese’s peanut butter chips.
I forced this dessert on my family tonight …
and can honestly report a 120% satisfaction rating!
